holy heavens these are good! Not only that they are super healthy and boys think they are cupcakes, hehe. So if your looking for some super moist, chewy and yummy muffins try these out!


whole wheat cranberry pumpkin muffins
yields: 12 muffins
ingredients

1 1/2 cups whole wheat flour
1 tbs pumpkin pie spice
1 tsp baking soda
1/4 baking powder
1/4 tsp salt
1/3 cup unsalted butter
2 tbs flaxseed meal
5 tbs water
2 tbs chia seeds
2 eggs 
1/2 cup raw unfiltered honey
1 cup pumpkin puree
1/2 cup crasins (dried cranberries)
1/2 cup chopped walnuts
instructions
1. preheat over to 350 degrees F. 
2. line muffin tin with liners or use a silicone muffin tin. 
3. mix flaxseed mill and chia seeds with water and let sit for 10min. 
4. whisk all the dry ingredients together and create a well (hole) in the center. 
5. add eggs, flaxseed/chia seed mixture , honey and pumpkin puree to the well and mix together. 
6. add crasins and walnuts and incorporate. 
7. fill muffin tins 3/4 full and bake for 18-23min until golden brown and toothpick comes out clean. 
8. store at room temperature or freeze.

8 weeks



as most of you know we have moved to grants, nm... and while i do have a lot to say about that, i don't think i am ready. this move has been hard and i need a minute to wrap my head around it. that being said, today my little wes wes is eight weeks not two months (thank goodness) but eight weeks! i cannot believe how fast the time is going by this time. please slow down...stay little forever...
